Ingredients
- Main Ingredient: 1 turtle, approximately 800 grams.
- Supporting Ingredients: 30 grams of Goji berries, 30 grams of Chinese yam, 15 grams of Ligustrum berries, 15 grams of Rehmannia root.
- Seasonings: Cooking wine, salt, scallions, ginger slices, lard, and chicken broth as needed.
Preparation Process
- Clean and slaughter the turtle, remove the internal organs, and place it in hot water to remove the outer membrane. Remove the shell and cut the meat into 5 pieces. Blanch the pieces in boiling water to remove any blood residue, then rinse thoroughly. Wash the Goji berries, Chinese yam, Ligustrum berries, and Rehmannia root to remove impurities.
- In a pot, add chicken broth, turtle pieces, herbs, cooking wine, salt, scallions, and ginger slices. Cook until the turtle meat is tender. Remove the scallions and ginger, then drizzle with lard before serving.
