Ginseng Congee

Ingredients:

  • Fresh Ginseng: 15 grams
  • Rice: 1 handful
  • Water: Extra abundant (the amount will be specified in the instructions)
  • Cooking Pot: 1 cast iron pot

Instructions:

  1. Prepare the Ingredients: Rinse the jasmine rice and set it aside. Carefully wash the fresh ginseng and chop it finely.
  2. Cooking the Congee:
  • Place the cast iron pot on the stove and add an ample amount of water—more than you would typically use for regular congee, as a generous quantity of water is essential to extract the full flavor and benefits from the ginseng.
  • Bring the water to a boil over high heat.
  • Once the water has reached a rolling boil, add the rinsed jasmine rice into the pot.
  • Continue to cook on high heat for 15 minutes after the water has returned to a boil.
  • Then, add the finely chopped ginseng to the pot.
  • Resume cooking on high heat for another 15 minutes. The congee should become thick and creamy, with a white essence appearing, indicating that the ginseng’s nutrients have been well-released into the congee.

  • This ginseng recipe should only be consumed before 12 PM, ideally as part of breakfast before 9 AM.Consuming it later can cause overheating and may be harmful to your health.
